Salsa Verde




1 tsp. salt
1 tsp. black pepper
3 cups diced green tomatoes
1/2 cup fresh cilantro
1/4 cup diced onion
2 Tbls. lime juice or lemon juice
2 Tbls. olive oil
2 tsp. oregano
2 tsp. thyme
2 tsp. sugar
2 tsp. cumin
4 garlic cloves, minced (2 tsp.)
1/2 tsp. - 1 tsp. red pepper flakes, cayenne pepper, hot sauce, minced peppers, or whatever source of heat you want.

Blend all ingredients together until liquefied. Makes 1 quart.
